Homemade dumplings are best cooked on custard dough without yeast. You can use any foods you like for the filling.

The cook shared on Instagram a recipe for the perfect choux pastry for dumplings that won't fall apart.


Ingredients:

  • flour – 400 g
  • water - 200 ml
  • vegetable oil - 3 tbsp. l. l.
  • salt – 0.5 tsp.

Filling: (can be any)

  • mashed potatoes – 250 g
  • mushrooms (champignons) – 80 g
  • fried onions

Method of preparation:

1. Pre-sift the flour, add salt and butter to it. Pour in boiling water and quickly knead the dough, first with a spoon, then with your hands. Wrap the dough in cling film and leave for 20-30 minutes.

2. Roll out the finished dough into a thin layer and squeeze out the circles with a glass. Put about 1 tbsp inside. l. fillings and seal well. Place on a floured board.

3. Salt the water (2 liters) and bring to a boil. Put the dumplings in boiling water and as soon as they float to the surface, cook for another 3-5 minutes and you can take them out.

Put the dumplings in a deep dish, pour fried lard with onions, mix.
